Butchers were part of Timaru’s horse-powered CBD. Walter Gilchrist operated a slaughterhouse at Washdyke and later a Stafford St shop. His business used horse-drawn butcher carts to move meat and serve customers. Rights-of-way gave access behind businesses and enabled horses and carts to make deliveries away from the main shopfronts.
